Tip of The Day:  Plan your meals ahead of time for the day or even week.  This will help keep you from caving in to a sudden craving.  It will also make sure your calories are track for your weight loss (or maintenance goals).  
Lunch pictured above features lettuce greens sliced avocado, corn (leftover grilled ear from last night), onions, mushrooms, ground turkey, green chillis, and Franks Red Hot.  I added a little but of sour cream as well on top.  It was inspired by my delicious Buffalo Turkey Burger.

Turkey Burger with Kale Chips Lunch Recipe

Last night, I got a craving for a burger while reading my June issue of Real Simple.  Specifically I wanted a burger with avocado!  Luckily, I had ground turkey in my fridge and an avocado for a perfect lunch combination.

I toasted 1 slice of Ezekiel bread and topped it with avocado and sliced grape tomatoes.  I simply pan fried 4 oz of ground turkey and placed on top.  

Feeling good about my burger, I decided to make myself some chips, KALE chips.  I had a bag washed and chopped ready to be eaten so I pre-heated the oven to 425F, sprayed the leafs with Olive Oil and topped with Mrs Dash Garlic seasoning.  Bake the kale for 10 minutes or until crispy and enjoy! 

This is one of my favorite lunches that I have made in a long time.  The tomatoes fell out from under the burger so I ate them separate.  Next time, a roma or beefsteak tomato would be better ;)

Affordable, Heart Healthy Tuna Recipes

Tuna is a staple in my household.  In the freezer or in a can, it is an affordable and healthy protein to have on hand.  Whether it is for dinner or lunch, here are two of my favorite recipes.

Tuna Steaks with Fresh Avocado Summer Salsa

Last night for dinner, I made tuna steaks topped with avocado, grape tomatoes and red onion salsa with corn on the cobb.   This dinner took about 15 minutes to prepare and cook.  For a pound of frozen tuna steaks at Trader Joe’s, it costs less than $6.  An ear of corn these days costs less than 40 cents making this dinner the ultimate, affordable summer staple during the week.

Anti-Comfort Tuna Melt Recipe

Many days, I crave a good tuna melt.  Instead of my typical mustard and hummus recipe, I tried out a new tuna salad pairing.  

  • 2 Celery stalks, chopped
  • 1/4 cup Red Onion, chopped
  • 1 TBSP Greek Yogurt (or Mayo)
  • 2 TBSP Relish
  • 1 TBSP Dijon Mustard
  • 2 cans No Salt Added Albacore Tuna (Packed in Water)

Combine all the ingredients and mix well!

For the tuna melt, I put about 1/2 cup of the tuna mixture on a slice of Ezekial bread.  Next I sliced up a Mini Babybel© Light and spread it out on top.  The Mini Babybel Light makes this tuna melt guilt-free!

Then I placed in my toaster oven on broil for 5-10 minutes.  You can leave yours in for as long as you want.  I like mine once it’s begun to brown a little.  Cut into 4 squares and enjoy like a slice of pizza!

Black Bean Mango Quinoa Salad

Black Bean Mango Quinoa Salad

  • 2 cups quinoa
  • 4 cups water
  • 1 mango, diced
  • 1 can black beans, rinsed and drained
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1/2 red onion, diced
  • 1 small bunch of cilantro, chopped fine
  • the juice of 1 lime
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1/4 cup olive oil

Cook quinoa according to package directions with water. Add all other ingredients to a large bowl. When quinoa is cooked, add to large bowl and stir to combine. Let set for about 15 minutes before serving so that the flavors can combine.
